Vegetable Potato Fritters



Protein-packed, kid-friendly fritters! Perfect for a night of dip tasting :)

Ingredients:

Vegetable potato fritters

  • 3/4 cup red lentils

  • 1 small red onion (chopped)

  • 2 cloves of garlic

  • 2 potatoes (raw, medium-sized )

  • 1 carrot (medium-sized)

  • 5 tbsp all-purpose or gluten-free flour

  • 1/2 tsp smoked paprika powder

  • 1 tsp regular paprika powder

  • 1 tsp marjoram

  • Salt and black pepper (to taste)


Sriracha Mayonnaise

  • 3 tbsp vegan mayonnaise

  • 1 tsp tomato paste

  • 1 tsp garlic powder

  • 1/2 tsp smoked paprika powder

  • Salt and black pepper (to taste)

  • Sriracha sauce (to taste)


Steps:

  1. Cook red lentils according to package instructions.

  2. Peel and grate potatoes and carrot. Place in a large bowl and mix in lentils, garlic, onion, flour, and spices. Stir well.

  3. Heat oil in large non-stick pan, add about 1 1/2 tbsp for each fritter. Cook fritters on medium heat for 3-4 minutes on each side.

  4. Make vegan sriracha mayonnaise: combine all ingredients (see above) and stir well.

  5. Serve fritters with green salad and sriracha mayonnaise. Enjoy!


Tips:

  1. Want an oil free version? Cook fritters in the oven rather than the pan (about 20 minutes, flipping halfway).
